Easy Eggplant -Tofu Stir Fry Recipe in a Snap!


I wasn't really planning on writing this recipe here but as you all know, the recipes I write here are the actual food and dishes that I make on our everyday meals. I have planned the meals that Pao and I will be eating for the week and this one, I just thought of earlier. We had this for our lunch and I really love it! It was so easy, uncomplicated, healthy, and delicious! 

If you observed, I cook a lot of viands because I need to eat rice for lunch, or else I will have a headache the rest of the day, It always happens haha so expect more "ulam" recipes on this blog. 

Cause I really didn't plan on writing this so I do not have other photos aside from the finished product. I did not take photos of the raw ingredients. 

I really love this recipe and it's really simple and quick to make, well aside from the pre-frying of the eggplants and the tofu that will take a bit of time, the stir-frying process itself is quite a breeze!


INGREDIENTS:

Oil
Garlic (minced)
Onion (sliced)
Eggplant (sliced the way you want it, pre-fried)
Tofu (drained, sliced into cubes, pre-fried, I also love to season it with a bit of salt before frying)
Oyster Sauce
Water


PROCEDURE:

1. Put oil on the wok. Sauté the garlic and save a little for garnishing later on. Add the onions, stir-fry. 

2. When the garlic and onions are ready and are really fragrant, put a bit of water so your eggplants and tofu have a bit of a sauce enveloping them later. Add the Oyster sauce. (Usually, oyster sauce is enough, it has a  salty and sweet flavor, but if you wanted it to be saltier then you can add soy sauce or salt)

3. Adjust the heat to medium-high, quickly add your eggplants and your tofu, stir fry for 20 seconds or less. Remove from the heat, transfer to a serving plate and garnish with our fried garlic. 


Serve with your favorite rice! Enjoy!
